  • 400g packet microwave baby potatoes with butter and herbs
  • 1 leek
  • 250g skinless salmon fillet
  • 420g can corn kernels
  • 2 garlic cloves
  • 60ml (1/4 cup) olive oil
  • 100g pre-diced bacon
  • 2 tablespoons plain flour
  • 500ml (2 cups) almond milk
  • 310ml (11/4 cups) Massel Chicken Style Liquid Stock
  • 16 peeled green prawns, tails intact
  • 2 fresh continental parsley sprigs

    Method

    • Step 1
      Heat a large deep frying pan over high heat. Cook the potatoes in the microwave following packet directions.
    • Step 2
      While the pan heats up, slice the leek and cut the salmon into 2cm pieces. Drain the corn. Crush the garlic.
    • Step 3
      Once the pan is hot, add the oil, bacon, leek and garlic to the pan and cook, stirring, for 2-3 minutes or until soft. Add the flour and cook for 30 seconds or until well combined. Remove from the heat.
