  1. Clean the tripe well and chop it into small pieces, then put it in a pot with water and bring it to a boil for 10 minutes. Drain and reserve.
  2. Cut the chorizo and morcilla into small pieces.
  3. Chop the onion, garlic, tomatoes, and peppers.
  4. In a large pan, sauté the chorizo and morcilla until they start to release their oils, then add the onion, garlic, tomatoes, and peppers and continue to sauté for a few more minutes.
  5. Add the tripe, paprika, cumin, oregano, bay leaf, salt, and pepper and mix everything well.
  6. Add enough water to cover everything and bring to a boil. Reduce the heat and let it simmer for 1 hour.
  7. Add the cooked chickpeas and let them simmer with everything for another 10-15 minutes.
  8. Remove the bay leaf and serve hot.
