  • 2 tablespoons pistachio kernels
  • 2/3 cup fresh flat-leaf parsley leaves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon dried chilli flakes
  • 250g cherry truss tomatoes
  • Olive oil cooking spray
  • 4 x 2cm-thick slices white vienna bread

    Method

    • Step 1
      Preheat grill on high. Line a baking tray with foil. Place pistachios and parsley in a small food processor. Process until finely chopped. Add oil, lemon juice, cumin and chilli. Process until combined, adding 1 to 2 tablespoons water if mixture is too thick. Season with salt and pepper.
