2 tablespoons pistachio kernels
2/3 cup fresh flat-leaf parsley leaves
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1/4 teaspoon ground cumin
1/4 teaspoon dried chilli flakes
250g cherry truss tomatoes
Olive oil cooking spray
4 x 2cm-thick slices white vienna bread
8 eggs

Method
- Step 1Preheat grill on high. Line a baking tray with foil. Place pistachios and parsley in a small food processor. Process until finely chopped. Add oil, lemon juice, cumin and chilli. Process until combined, adding 1 to 2 tablespoons water if mixture is too thick. Season with salt and pepper.
