  • 1 Coles Bakery Rustic Baguette
  • 1/2 cup (150g) whole-egg mayonnaise
  • 2 tsp Dijon mustard
  • 1/4 tsp coarsely ground black pepper
  • 1/2 cup (130g) tomato chutney
  • 150g Primo Roast Pork
  • 330g jar roasted peppers (capsicum), drained, thickly sliced
  • 60g baby rocket leaves
  • 2 tbs basil leaves

    Method

    • Step 1
      Use a large serrated knife to split the baguette lengthways.
    • Step 2
      Combine the mayonnaise, mustard and black pepper in a bowl. Spread mayonnaise mixture over the baguette base. Spread tomato chutney over the baguette top. Arrange pork, capsicum, rocket and basil over the baguette base. Top with the baguette top. Cut crossways into quarters to serve.
