3/4 cup caster sugar
50g vegan spread (we used organic spreadable with rapeseed, coconut, shea and almond)
1/3 cup coconut milk
2 small granny smith apples
2 cups self-raising flour
1 1/2 cups almond meal
1 teaspoon ground cinnamon
3/4 cup brown sugar
3/4 cup sunflower oil
2 teaspoons vanilla extract
1 cup unsweetened almond milk
1 teaspoon bicarbonate of soda
1 tablespoon apple cider vinegar

- Step 1Preheat oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 5cm above edges of pan on all sides.
