  • 3/4 cup caster sugar
  • 50g vegan spread (we used organic spreadable with rapeseed, coconut, shea and almond)
  • 1/3 cup coconut milk
  • 2 small granny smith apples
  • 2 cups self-raising flour
  • 1 1/2 cups almond meal
  • 1 teaspoon ground cinnamon
  • 3/4 cup brown sugar
  • 3/4 cup sunflower oil
  • 2 teaspoons vanilla extract
  • 1 cup unsweetened almond milk
  • 1 teaspoon bicarbonate of soda
  • 1 tablespoon apple cider vinegar

    Method

    • Step 1
      Preheat oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 5cm above edges of pan on all sides.
