  • 55g (1/3 cup) raw cashews
  • 1 head (about 800g) cauliflower, cut into florets, stems sliced
  • 2 tbs olive oil
  • 1 tsp garam masala
  • 1 leek, trimmed, halved, thinly sliced
  • 1 small brown onion, finely chopped
  • 2 small celery sticks, sliced
  • 3cm-piece fresh ginger, peeled, chopped
  • 2 garlic cloves, chopped
  • 1L (4 cups) salt-reduced gluten-free vegan vegetable stock
  • 500ml (2 cups) unsweetened almond coconut milk

    Method

    • Step 1
      Place cashews in a bowl and cover with cold water. Set aside for at least 2 hours or overnight to soak. Rinse. Drain.
